Dinner on Halloween

We love a light soup for dinner on Halloween. Two Bees Family tradition is White Chicken Chili. It's quick to throw together and can be done the day prior.

Ingredients:
3 Tablespoons EVOO
1 medium onion, chopped
1 4-ounce can green chiles, chopped
3 Tablespoons AP flour
2 teaspoons ground cumin
2-3 16-ounce cans northern beans, or any white bean you like
32-ounces chicken broth
1 1/2 cups chopped, cooked chicken breast
Directions:
In a large heavy-bottom pot cook onion in EVOO for about 4 minutes, until translucent. Add chiles, flour and cumin, cook and stir for about 2 minutes. Add beans and chicken broth. Bring to a boil, reduce heat and simmer for 10 minutes until thickened. Add chicken and cook until hot about 10 minutes more.
Garnish options for this chili are endless. We love sour cream and cilantro. Other topping ideas inlcude limes wedges, bell pepper, avocado, chopped tomoatoes, or tortilla strips.
